Breakfast:

2 Veggie, Sausage, Egg Muffins

Blueberry, Mango, Banana Protein Smoothie

– 1 banana, cut up and frozen

– 1 cup frozen blueberries

– 1 cup frozen mangoes

– 2 cups almond milk

– 2 scoops vanilla protein powder

Snack:

1 cup of grapes

Lunch:

6 a Day Salad with Leftover Spicy Shrimp

1 Cucumber with Guacamole

Dinner:

Slow Cooker Cincinnati Chili

I took out the edamame since we can’t have soy. This can be eaten as a snack or add chicken/shrimp for a meal.

Zucchini Fritters with Spicy Shrimp

I wasn’t a huge fan of the fritters, but I liked the flavor on the shrimp. I’m going to put them with a salad tomorrow.

SNOW DAY!! I love being a teacher! I spent a good part of the day getting our food prepped for the week. It was so nice to have the whole day off. Turns out there was a car stuck in our parking lot all morning so we wouldn’t have been able to get out anyway.

Snack:

1 red apple

Dinner:

When we were at the grocery store I got an email from the superintendent saying school is cancelled tomorrow! This was a call from a celebration, but I didn’t let myself get too overboard. We brought our own food over, but I let myself have some wine. The appetizers turned out super yummy!

I made bacon wrapped jalapeno poppers filled with taco meat and Jalapeno-Lime Chicken Wings.

2 egg and veggie scramble

Snack:

Protein powder, almond milk and coffee shake. This tasted just like a latte from Starbucks. Yum!

Wowza Baked Chicken Drumsticks

The name is perfect. Before paleo we of course would have drowned these in ranch, but they were great even without dipping sauce.

Snack:

2 hardboiled eggs

Celery Sticks with Sunbutter

Dinner:

Bacon and Apple Burgers, Sweet Potato Fries, Sauteed Muchrooms

Hyvee was out of ground chicken so I used ground beef instead.

Scotty informed me we are 1/5 of the way done!

Breakfast:

I tried to make paleo pancakes and the recipe I tried was a total fail. I’ll have to try a different recipe next time.

I made a fried egg and a smoothie instead.

Leftover Stuffed Peppers

Rosemary and Sea Salt Roasted Almonds

Dinner:

We went to dinner at Roja with friends. It was very hard to not eat the chips and salsa in front of us, but it was harder not to get a margarita. I did it though! We both ordered a taco salad, without the fried shell and cheese.

Snack:

I brought a red apple with me to the movies. Not as good as popcorn, but it was easier when I had something to munch on.

60 Day Paleo Challenge Day 8 — January 29, 2015

Day 8

It has been a week and I finally let myself weigh in. I lost more than I have ever lost in a week. I am so happy to see results on the scale. I’m not going to lie, this is hard, but it’s so much better when I see progress.

Breakfast:

Coffee with Paleo Coffee Creamer

1 egg, 1 slice of bacon and a Strawberry, Banana, Mango Smoothie. The recipe called for pineapple juice, but we aren’t allowed to have juice concentrate. I changed out the pineapple juice for almond milk and added in frozen mango. So yummy.

Lunch:

Leftover London Broiled Steak and Zucchini Noodles

Snack:

Rosemary and Sea Salt Roasted Almonds

Snack:

1 red apple

Dinner:

Lime and Garlic Salmon

Salad with olives, mushrooms, and avocado
