1 red apple with sunbutter

Salad with sauteed shrimp, grapes, apples, mushrooms, and olives

Snack:

2 hardboiled eggs

1 mandorin orange

Dinner:

Stuffed Peppers

Orange Almond Cookies

These were delicious! I had to put them away so Scotty would stop eating them.

Sauteed veggies and breakfast sausage in 2 scrambled eggs

Sauteed Shrimp on salad with avocado, mushroom, olives and Paleo Greek Dressing

Snack:

Apple Cinnamon Rx Bar (The only bar we are allowed to have)

Snack:

Paleo Crockpot Meatballs over Zucchini Noodles and flavored water

Day 8

It has been a week and I finally let myself weigh in. I lost more than I have ever lost in a week. I am so happy to see results on the scale. I’m not going to lie, this is hard, but it’s so much better when I see progress.

Breakfast:

Coffee with Paleo Coffee Creamer

1 egg, 1 slice of bacon and a Strawberry, Banana, Mango Smoothie. The recipe called for pineapple juice, but we aren’t allowed to have juice concentrate. I changed out the pineapple juice for almond milk and added in frozen mango. So yummy.

Lunch:

Leftover London Broiled Steak and Zucchini Noodles

Snack:

Rosemary and Sea Salt Roasted Almonds

Snack:

1 red apple

Dinner:

Lime and Garlic Salmon

Salad with olives, mushrooms, and avocado

Snack:

2 4 ingredient Nut Butter Cookies

Breakfast:

1 tbsp almonds, 1 fried egg, 1 bacon, 1 clementine

Snack:

1 cup grapes

Lunch:

Paleo Almond Chicken Fingers with 3 tbsp honey

We probably went a little overboard on the honey, but we got so excited we could have something sweet. The chicken fingers were a bit spicy so the sweetness of the honey went perfect with them.

Snack:

1 orange

Dinner:

London Broiled Steak with pan fried zucchini noodles

This tasted amazing, but we had to tweak the cooking directions a bit. After following the recipe’s directions, the steak was still completely raw inside. I finished the steak off by broiling them.

Snack:

Frozen pineapple and almond milk ice cream

Breakfast:

I tried to make this Baked Tomato Egg Breakfast, but let me tell you, NOT A FAN! I baked it for the amount of time the recipe said, but the egg was still runny. I cooked it longer and the tomato was still hard. We ended up just eating the egg and a slice of bacon.

Arugula with leftover Cilantro Lime Grilled Chicken, grapes, apple, almonds, red onion, avocado, Paleo Greek Dressing.

Snack:

3 celery sticks with 2 tbsp almond butter

Snack:

1 cup of grapes

Baked Sweet Potato Chips with fresh salsa

Dinner:

We went out to eat with Scotty’s family for his dad’s birthday. This was my first time during the challenge eating something that didn’t come out of my kitchen. We looked up the restaurant’s menu beforehand to make a plan for what we would order. There were literally only two choices on the menu that would work and we would have to be those annoying customers to change them a bit. We decided on the cashew crusted salmon with no terriyaki sauce and extra vegetables instead of rice. We said no to appetizers, wine, and dessert, which all looked amazing. I am pretty proud of myself for making it through the dinner.

Breakfast:

2 eggs over easy with 2 slices of bacon, coffee with almond milk

Snack:

2 clementines

Lunch:

Leftover Crockpot Beef Fajitas

6 oz turkey breast, 1 cup almond milk

Dinner:

Cilantro Lime Chicken on arugula with almonds, grapes, green apple, red onion, avocado, and Paleo Greek Dressing.

For our first paleo date night out we went to coffee and a movie. We are used to having alcoholic drinks in our hands so we had to at least pretend we were doing a crazy drink, coffee bombs! Although we do enjoy going out to eat and getting drinks together we still had a lot of fun.
