I tried to make this Baked Tomato Egg Breakfast, but let me tell you, NOT A FAN! I baked it for the amount of time the recipe said, but the egg was still runny. I cooked it longer and the tomato was still hard. We ended up just eating the egg and a slice of bacon.

Baked Sweet Potato Chips with fresh salsa
We went out to eat with Scotty’s family for his dad’s birthday. This was my first time during the challenge eating something that didn’t come out of my kitchen. We looked up the restaurant’s menu beforehand to make a plan for what we would order. There were literally only two choices on the menu that would work and we would have to be those annoying customers to change them a bit. We decided on the cashew crusted salmon with no terriyaki sauce and extra vegetables instead of rice. We said no to appetizers, wine, and dessert, which all looked amazing. I am pretty proud of myself for making it through the dinner.
